Red mullet is classified as a white fish but has a more satisfying flavour and a richer taste thanks to its diet of shellfish. The smaller the red mullet are the better the flavour, and our skin on fillets are a pleasing average of 60g, ensuring the sweetest and most desirable flesh. Red mullet is no relation to grey mullet! Recipe
Red Mullet en Papillote
1 tsp oregano
100ml olive oil
50 mls white wine
juice of one lemon
sea salt and ground black pepper
Mix all the ingredients. Place the individual Red Mullet fillets onto a square of kitchen foil. Fold the foil around the fish, pastie style, leaving ann opening at the top. Pour equal measures of the mixture into the parcels and then close the opening.
Preheat oven to 200C. Place the red mullet parcels on a baking tray and bake for exactly 12 minutes.
